Chocolate Graham Cracker Cupcakes with Toasted Marshmallow


Ingredients


2 1/4 cups plus 2 tablespoons sugar

1 3/4 cups all-purpose flour

3/4 cup plus 1 tablespoon cocoa powder (not Dutch-processed)

1 1/2 teaspoons baking powder

1 1/2 teaspoons baking soda

1 teaspoon salt

2 large eggs

1 cup whole milk

1/2 cup vegetable oil

2 teaspoons pure vanilla extract

1 cup boiling water

1 1/2 cups graham cracker crumbs (from about 20 squares)

1/3 cup unsalted butter, melted

9 ounces bittersweet chocolate, finely chopped

Marshmallow Frosting



Directions

1.Preheat oven to 350 degrees. Line 2 standard muffin tins with cupcake liners; set aside.

2.Sift 2 cups plus 2 tablespoons sugar, flour, cocoa powder, baking powder, baking soda, and salt together into the bowl of an electric mixer. Using the paddle attachment, mix ingredients together on low speed.

3.In a large bowl, mix together eggs, milk, oil, and vanilla. Add to flour mixture and beat on medium speed for 30 seconds. Scrape down sides of bowl and continue mixing on medium speed for 2 minutes. Add boiling water and stir to combine; set cake batter aside.

4.Place graham cracker crumbs, remaining 1/4 cup sugar, and melted butter in a large bowl; stir until well combined.

5.Place 1 tablespoon graham cracker mixture into the bottom of each prepared muffin cup. Use the bottom of a small glass to pack crumbs into the bottom of each cupcake liner. Reserve remaining graham cracker mixture for topping.

6.Place 2 teaspoons chocolate in each muffin cup. Transfer muffin tins to oven and bake until the edges of the graham cracker mixture is golden, about 5 minutes. Remove from oven and fill each muffin cup three-quarters full with cake batter. Sprinkle each with remaining chocolate and graham cracker mixture. Return to oven and bake, rotating pans halfway through baking, until tops are firm and a cake tester inserted in the center comes out clean, 18 to 20 minutes. Transfer muffin tins to a wire rack and let cupcakes cool in pan for 10 minutes. Remove cupcakes from pan and let cool completely.

7.Transfer frosting to a large pastry bag fitted with a large plain round or French tip (such as Ateco #867 or Ateco #809). Pipe frosting in a spiral motion on each cupcake. Transfer cupcakes to a baking sheet. Using a kitchen torch, lightly brown the frosting, taking care not to burn the cupcake liners. Serve immediately or store in an airtight container, up to 2 days.

Baby's Progress @ 2 Months & 3 Weeks

Baby Jayden has certainly grown up so quickly and I can't believe that he's a cute little baby going into his 3rd month now. The reflection of being admitted to hospital for delivery, baby's first few days at home, baby's first of everything seems as though it has just occured yesterday.

Baby's progress @ 2 months & 3 weeks:-

- he's able to hold his mini milk bottle for a few seconds without our help

- he drinks 3.5- 4 oz of milk every 2 hours

- he will put his arms around my body when I say ' baby, put your hands behind' while breastfeeding

- he's able to hold his pacifier using his little fingers to prevent it from dropping

- he laugh out loud when we play with him

- he loves to smile(Really smileeeeeeeee) when he's in a good mood, even when he's sleeping

- loves to be carried like a koala bear especially when bedtime

- can recognise voices and turn his head towards where the sound comes from

- loves to babble especially when he wants attention

- loves sleeping in his car seat while going for a car ride. This makes sending him to the babysitter so much easier since he'll sleepin throughout the journey

- enjoys 'kai kai' (shopping) time. he'll be very excited when we tell him that we're bringing him out for kai kai

- loves to aim at us and pee when we remove his diaper. Hubby's always the victim, hahaha....

- able to lift his head up high for few secords. He's a strong baby!

- enjoys it when we talk to him, as though he really understand, hahaha....

Gee, I wish he'll forever be my little baby boy. I just love all his baby moments....

Baby @ 2 Months, 2 Weeks & 3 Days

Baby has not poop for 5 days already, and this really make us worry and anxious. So we decided to bring him to the doctor.

Thank God that the doctor said this is normal for breastfeed babies. Sometimes it can goes up to 7 or 10 days without poop, but so long as baby can eat well and no unusual sign, then we don't have to worry. Phieewwww......

But something else make is worry now. Guess what?! His weight! He's a healthy 2 months old baby with the weight of 7.1kg. However doctor asked us not to worry too much as this may due to his 'overdue' poops. Way to go, baby!!!

At 2.5 months, baby is able to hold his milk bottle (although it's just for about 10 seconds).  He has certainly grown up......

Baby's Progress @ 2nd Month

Baby has recently discovered the fun of playing with his fingers. He enjoys sucking his thumb every now and then ( hubby said they way baby sucks his fingers are exactly the same as when hubby was young, as the saying goes-->Like father like son!)

He's also able to hold his milk bottle with both hands (without our help) for a few seconds. Not to mention that he's able to hold his pacifier and even know how to push it into his mouth. Smart boy!

Baby BooMing Year

This year is indeed a 'productive' year whereby a lot of my close friends are blessed with their newborn.

Things That I Miss Doing....

Things that I miss after during pregnancy:-

Food: Pineapple...I used to buy pineapple after lunch everytime at a stall near my office

Drink: Coffee

Attire: My high heels

Leasure: travelling. I've got to burn a couple of the AirAsia tickets ( Bangkok, Hat Yai, Ho Chi Minh, Phnom Penh, KK) which I booked before preggie

Sleeping pattern: I had sleepless nights especially during the 3rd trimester, waking up at 2-3am and couldn't fall asleep again as baby is playing football, kicking me here and there. Hahaha....

Things that I miss about after delivery:-

Food: ice-cream, cendol, ABC, etc...all the icy cold stuff!

Drink: Coffee again......

Working: flexible office hours whereby you get to come in to office late and leave early without guilt...

Body: my baby bump & the closeness of baby's heartbeat and movement in my womb

Leasure: Shopping and dining after office hour/ weekend without having to worry about baby

Sleeping patter: Nowadays hubby and I gotta wake up every 2-3 hrs or as soon as baby cries. He's our alarm clock now, demanding for his favourite, milk.....

Hubby and I noticed that baby has slimmed down this morning, especially his cute chubby face. This makes us worry whether he is feeling unwell as he drinks less of milk (his favourite drink!!!) these few days....

I Miss Baby Jayden

Life back to work is not as 'exciting' as babysitting at home where you get to feel the stress when baby cries for milk, fuss when he's bored, screaming for a diaper change etc......But I still miss those confinement time whereby I get to spend 24 hours with baby.

Mummy miss you very much, baby Jayden!

P/s: Wonder how is he doing at babysitter's place now!

Baby & His Pacifier

I've been very reluctant to let baby starts sucking pacifier all the while that I did not even buy 1 for him until recently. He used to have a bad habit of sucking my nipples everynight when he wanna go to bed, otherwise he'll fuss.

But I guess I have no idea but to buy him a pacifier at last (hubby has been nagging me to get him a pacifier everytime he cries. I wonder what is sooooo good about pacifier that hubby wants baby to start using it!!!) I totally hate the idea of pacifier, but ended up buying 1 for him( thank goodness that there's such pacifier from MAM that can help to prevent teeth misalignment).

We Have Officially Moved

We (hubby & I) have officially moved.......

.........from our master bedroom to baby room today after confinement lady left. Confinement aunty has been staying and taking care of baby for the past 2 months, that means I've been enjoying my confinement months without stress. Now we are gonna experience the real parenting time all by ourselve, changing diaper,bathing the baby, feed when require, clean the house, do baby' s laundry,etc....Gosh,it's certainly wouldn't be easy!

This year, we did not have any fancy nor romantic anniversary celebration. But, rather a more intimate family dinner with our baby at a Japanese restaurant at our neighbourhood. Although it is just a simple dinner, the love and warmt having spent time with hubby and baby is indeed the best family time we had together....
